Hooking, Braiding or sewing with patterned wool fabric allows for a controlled repeat of several different colors. Use a black and white herringbone for a salt-and-pepper effect. Hooking with a check brings out the many individual colors that meld together in a weave. Some rug hookers swear by their paisley - even if it is quite expensive and needs to be felted up a bit to give it enough body for hooking. Experiment with those patterns and textures you feel drawn to and see what happens.
